Chateau Dereszla Kabar száraz, 2021

The sixth officially permitted grape variety in the Tokaj appellation, Kabar was born in the 1970s as a result of crossing Hárslevelű and Bouvier. Our winery has been producing this wine since 2004 (initially it went by its technical number T10), in limited quantities of a few thousand bottles per year. With a relatively low yield, it ripens early, produces high sugar and is prone to botrytis.This is a pure Kabar wine. The grapes were hand picked and carefully selected, the healthy (not shriveled or botrytised) berries were transported to the processing plant in small, 25 kgs crates, then pressed with pneumatic press. The wine was fermented in new oak barrels, then was aged on lees for 6 months with batonnage. The typical linden aromas are complemented by the vanilla taste given by the barrel.
